The production kitchen and support areas of the University of New Hampshire’s Conferences and Catering required expansion and reorganization to meet the increasing demands of the services provided. Harriman developed a study with the staff and Director of Business Affairs that compared a building addition to an interior alteration. The study resulted in an expansion opportunity that benefited from capturing space from an adjacent user group.
The renovation relocated and improved the work flow for the three food preparation departments, the operations staging areas, and the support staff offices. The resulting renovation is well received by the staff, as it greatly increases their space efficiencies and adjacencies. The marketing and sales staff are well positioned to present tastings in a new conference room, an amenity afforded by the reorganization.
Renovations included new commercial kitchen equipment, kitchen ventilation hoods and fire suppression, new utility distribution system at the cooking line, new interior lighting, and architectural finishes.
